The oysters from Ria Formosa are prized for their delicate flavour and firm texture. They are cultivated in the rich waters of the Ria Formosa Natural Park, located in the Algarve region of southern Portugal, a nice drive from the resort. The sheltered lagoon environment provides the perfect conditions for oysters to grow, with a mix of fresh and saltwater, as well as an abundance of plankton for them to feed on.
