Portugal reveals itself through taste.
In every region, there are recipes passed down through generations. Ingredients that only that land can produce. Wines that drink in the light of a different sun. Stories told around the table, among family, that no book can ever fully capture.
For centuries, these traditions have been preserved by the hands of those who work the land, tend the vines and master techniques passed from one generation to the next. They are the true guardians of our gastronomic identity.
At Restaurante Adega, we have chosen to honour this legacy, travelling from Trás-os-Montes to the Algarve, from the Beiras to Minho, without ever leaving the Algarve. Because to know Portugal is to taste it. And we invite you to savour each region as if it were the very first time.

In the northeastern region of Trás-os-Montes, the harsh cold has shaped a cuisine of resilience. Free-range goat grazing on rocky slopes. Oak-smoked ham. Salt-cured cod. Wild mushrooms that appear in the forests after the first autumn rains. Chestnuts from Bragança. This is mountain cuisine - bold, honest flavours that need no apology for being exactly what they are.
Between Serra da Estrela and the valleys of Dão, altitude shapes everything. Mountain cuisine takes time - slow-cooked meats, cured flavours, and cheeses crafted in village kitchens. Granite landscapes and high-altitude vineyards give rise to elegant wines, fresh, vibrant, and mineral. This is a land where cold and tradition define taste.
Discover the heart of Alentejo, where cooking is an act of love for the land. The sun does the work, curing ham, concentrating tomatoes to intense sweetness, ripening figs until their skin cracks. Iberian black pigs roam freely through ancient cork groves. Simple ingredients transform into rich traditional feasts. Powerful wines from stressed vines, bread made to last, olive oil from century-old trees, stews perfumed with aromatic herbs. Every bite, every sip is tasting the soul of Alentejo.
Between Tejo and the Atlantic, Lisbon has always been a gateway. A cosmopolitan city that has absorbed spices, techniques, and influences, yet never lost its soul. Centuries-old markets. Historic taverns. Fresh fish from the docks. Shellfish from rocky coasts battered by the waves. This is the cuisine of encounter, traditional and contemporary at the same time, where heritage and innovation sit at the same table. Wines from unique terroirs found only here: vineyards on coastal dunes, sun-ripened Moscatel, Atlantic whites with striking minerality.
Between the wild Atlantic to the west and the calm Mediterranean to the south, with the fertile barrocal in between, Algarve cuisine is born of duality. Over 300 days of sun concentrate flavours, while ocean freshness and generous heat shape both ingredients and techniques. Wines from revived native grape varieties show that the region’s winemaking tradition is ready to be rediscovered.
Discover Bairrada, where tradition is celebrated at the table with generosity. Between the Atlantic and the mountains, clay soils create wines of dual personality, elegant sparkling wines that rival the world's finest, structured Baga reds that demand patience. Abundant and festive cuisine, made for sharing. Every meal is a celebration, every bottle tells stories of generations.
Discover Minho, Portugal's greenest region. Abundant rainfall, deep valleys, rivers flowing over granite. In autumn, the landscape transforms, the forest offers its seasonal treasures, humidity intensifies aromas, the cold invites comfort. Vinho Verde wines of vibrant acidity and mineral freshness. Cuisine that celebrates nature's cycle and the generosity of the land.
